Home Coffee Brewing: Roast, Grind and Ratios
Brewing coffee at home comes down to three controls: the roast and its freshness, the grind and ratio matched to your method, and the water itself. Read the bag for a roast date and a tasting note, set a grind and a weight-based ratio for pour-over, press or AeroPress, and treat water as an ingredient rather than a background. Get those three aligned and the cup stops being a lottery.
How do you read a roast date and a tasting note on a bag?
A roast date tells you how long the coffee has had to degas and stale. A roast date is not the same as a best-before date. Best-before is a marketing window; roast date is when the beans left the roaster. For filter methods, a common working range is 4 to 21 days off roast. Before day 4, beans still release a lot of carbon dioxide, and that gas pushes water away during blooming, which can flatten extraction. Past three or four weeks, the aromatics fade and the cup tastes papery or flat even if the grind is right. If a bag shows only a best-before date, subtract roughly 6 to 12 months to guess the roast window, and treat that guess as rough.
A tasting note is a description of what the roaster perceived in a cupping, not a flavoring. "Stone fruit" or "cocoa" means the roaster found those impressions in the cup, usually at a specific brew strength. It is a hint about roast level and origin more than a promise. A light roast with notes of citrus and berry usually wants a finer grind and hotter water to pull sweetness out; a dark roast with cocoa and molasses notes tends to extract fast and can turn ashy if you push temperature or time. Read the note as a direction, then adjust one variable at a time.
Roast level itself is a chemical story. During roasting, sugars caramelize and Maillard reactions build the brown compounds that read as chocolate, nut and toast. Lighter roasts keep more of the bean's original acids, which is why they taste brighter and more fruit-forward. Darker roasts lose those acids and gain bitter, smoky compounds from longer heat. That is why the same bean at two roast levels needs two different grind settings. Which grind and ratio suit pour-over, press or AeroPress?
Grind size controls how fast water can reach the coffee's soluble material. Finer particles expose more surface and extract faster; coarser particles slow that down. Match the grind to the contact time your method gives you.
Pour-over with a cone and paper filter runs a short, continuous contact, roughly 2:30 to 3:30 for a single cup. A medium-fine grind, close to table salt, works for most cones. Too fine and the bed clogs, water stalls, and the cup turns bitter and muddy. Too coarse and water runs straight through, leaving a thin, sour cup. A starting ratio is 1:16 by weight, so 15 g of coffee to 240 g of water. Pour in stages: a bloom of about twice the coffee weight, wait 30 to 45 seconds, then pour in slow circles.
French press is full immersion, 4 minutes of steeping with a metal mesh that lets oils and fine particles through. Use a coarse grind, like sea salt, so the mesh can trap most grounds. A ratio of 1:15, or 20 g to 300 g, is a reasonable start. Because the bed keeps extracting until you press, decant the brew once it is done rather than leaving it on the grounds.
AeroPress sits between the two. It is immersion plus pressure, so a medium-fine grind and a short steep of 1 to 2 minutes suit it. Ratios vary widely by recipe, but 1:12 to 1:15 by weight is a practical band. Pressure shortens the extraction, so a slightly finer grind than a French press is normal.

Weigh coffee and water. Volume scoops vary with bean density and roast, so a scoop of light roast and a scoop of dark roast are not the same mass. A scale removes that variable.
How does water change what ends up in the cup?
Water is roughly 98 percent of the cup, so its mineral content matters. Two things drive most of the effect: total dissolved solids and the balance of minerals. Distilled or reverse-osmosis water with almost no minerals extracts poorly and tastes flat, because minerals help carry flavor compounds out of the grounds. Very hard water, high in calcium and magnesium, can over-extract and taste chalky or dull.
A practical target is water with some hardness but not extreme. The Specialty Coffee Association publishes a water standard that puts the acceptable range around 75 to 250 ppm total dissolved solids, with calcium hardness near 50 to 175 ppm. If your tap water is heavily chlorinated, filter it; chlorine reads as a medicinal note in the cup. If it is very soft, a small mineral addition or a bottled water with moderate hardness can help.
Temperature is the other water variable. Most filter brewing sits between 90 and 96 degrees Celsius. Water that is too cool under-extracts and tastes sour; boiling water on a dark roast can pull out harsh, ashy notes. Let a kettle rest 30 to 60 seconds after boiling for a light roast, and a bit longer for a dark one.
Why does the same recipe taste different from one bag to the next?
Because the bean changed, not just your technique. Origin, processing and roast level all shift how fast a coffee gives up its solubles. A washed Ethiopian light roast and a natural Brazilian dark roast will not behave the same at 1:16 and a medium-fine grind. When a new bag tastes sour and thin, grind finer or raise the water temperature slightly. When it tastes bitter and dry, grind coarser or shorten the contact time. Change one thing, taste, then change the next.
Freshness also moves the target. A bag at day 5 off roast may need a longer bloom and a slightly coarser grind than the same coffee at day 15, because the early carbon dioxide release disrupts the bed. Note the roast date on the bag and adjust as the coffee ages.
How do you fix a batch that came out wrong?
Diagnose by taste, not by recipe. Sour, salty and thin usually means under-extraction: grind finer, raise temperature, or extend the brew time. Bitter, dry and hollow usually means over-extraction: grind coarser, lower temperature, or shorten the time. If the cup is both sour and bitter, the extraction is uneven, often from a poor grind distribution or a stalled pour, so check the grinder and the pour pattern before changing the ratio.
For a batch that is already brewed and too strong, dilution with hot water is a legitimate fix. For a batch that is weak, you cannot add extraction after the fact, so adjust the next brew. Keep a short log of roast date, grind setting, ratio and time for each method; after a few bags, the pattern for your grinder and your water becomes clear.
What about storing and freezing beans?
Whole beans stay fresher than ground coffee because less surface is exposed to oxygen. Store them in an airtight container away from light and heat, and grind just before brewing. Freezing is a reasonable option for surplus beans: seal them well, freeze them, and grind from frozen if your grinder handles it. The main risk is moisture and repeated thawing, so portion the beans before freezing and avoid opening the container repeatedly. For beans you will use within two weeks, a cool cupboard is simpler than the freezer.
